:: It's all about eggs... ::

Recently... my topics with a couple of frenz r all abt eggs... good eggs & bad eggs... which side do u belongs to? I bet most of u chose good rite?? well done... u haf admit that u r an egg... haha... for me, I would say... no, i'm neither... :P

At tampopo with Linus & Chris, we discuss abt the eggs they had served with their ramen... it is nice... lol... the white is harden while the yolk is very soft... Linus revealed the secret ingredient... vinegar is added to the water to boil the eggs... but beware, overcooking will lead to sour eggs... after it is done, the shell is removed & the eggs r soaked in dark soya sauce... i haf yet to try but soon, i will...

Over facebook, I have a chat with Bernard... he mentioned that he dislike century eggs... then we came to discuss on how century egg is made... The secret ingredient in this case is earth akaline, typically calcium hydroxide... it will break down the proteins inside to gives some favours compounds & ammonia... It was believe that traditional methods uses horse urine to prepare century eggs... so I believe Bernard dont really like the ammonia or the small protein compound... plus he's not really into seafood... which also has small protein compounds too, if it is not fresh...

I did a further read up on wikipedia & found some interesting facts abt other eggs...
1) To make tea leaves eggs... no tea leaves were used except spices...
2) A whole salted(370mg) & century egg(320mg) has a cholesterol level higher than our daily intake lvl (300mg/day) . A chicken egg is abt 210mg... However, some nutritionists believe that our human body don't really absorb the full cholesterol...
3) A good tea leaves egg... the eggs r soaked in the "tea"-brew for 2 days... so I wonder y they dun wanna remove the egg & soak them in like soya eggs...
4) To enhance the shelf-life of eggs... other than keeping them in the fridge... u can store them with their pointed-end facing downward, while the round-end facing up...
5) Most of the cholesterol & fats-soluble vitamins r in the egg yolk, while the water-soluble vitamins r in the egg white...

For myself, I dun like to consume the egg yolk if it is harden & fully cook... i dun really enjoy the powdery feel & the dryness...
